Hi Besties! Ok, so I have to admit that this recipe only has one ingredient from the garden, but it’s so good that I just HAD to share it. Our zucchini plants are finally ready to be picked and I couldn’t wait to make this recipe! I discovered Sally’s Baking Addiction a long time ago and her recipes are SO delicious that I keep making them over and over again. (This isn’t sponsored, I’m just that obsessed with her recipes). Completely unrelated, but her recipe for chocolate chip cookie cake is literally the most delicious thing that I have ever tasted! Anyway, once I tried this zucchini bread I just knew I had to share it.

Tips to making the most delicious zucchini bread ever
- I pick my zucchini when they are fully green and about 9 inches long. I used to let them get way too big before picking them and they didn’t taste as good and became a weird consistency.
- I just use a normal box cheese grater to grate the zucchini to add to the recipe. I love this one!
- I use this Calphalon loaf pan to bake the bread.
- You can make this delicious recipe with just one zucchini!


Ingredients
- 1 and 3/4 cups (220g) all-purpose flour (spooned & leveled)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 and 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup (120ml) vegetable oil (or melted coconut oil)
- 1/2 cup (100g) packed light or dark brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs, at room temperature
- 1/4 cup (60g) unsweetened applesauce (or sour cream or Greek yogurt)
- 2 teaspoons pure vanilla extract
- 1 and 1/2 cups (about 165g) shredded zucchini (no need to blot)
- optional: 1 cup (180g) semi-sweet chocolate chips (or chopped nuts, raisins, etc)

Zucchini grows really quickly, so if you don’t have any planted you can give it a try now! They only take about a month and a half from planting to have veggies growing. These are the zucchini seeds that I use. Check out my post on starting plants from seeds if you need some help getting started!
